BJ Kelley’s Holiday Recipe Of The Day – Friday
OK, for a Friday, I decided to skip over the main course… And head straight for dessert!
There are tons of recipes for Sweet Potatoe Pie, but this is my favorite. Let me know what you think!
What you’ll need:
1 pound sweet potatoe
1/2 cup softened butter
1 cup white sugar
1/2 cup milk
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1 teaspoon vanilla
9 inch unbaked pie crust
Start by boiling the sweet potatoe, the the skin, for 40 to 50 minutes. When done, run cold water over it and remove the skin.
In a bowl, break the sweet potatoe apart. Mix in the butter. Stir in the milk, sugar, cinnamon, vanilla, and nutmeg.
Mix and beat until it’s a nice, smooth, texture.
Pour the mixture into the pie crust and bake at 350 for 55 to 60 minutes.
You’ll know it’s done when a knife inserted in the center comes out clean.
Don’t worry if it poofs up… It will level out as it cools.
