You can't have a big Thanksgiving (or Christmas!) spread without... Rolls!

And, this time of year, how about adding a little pumpkin to those rolls?

Yes, pumpkin rolls!

What you'll need:

1 cup sugar
1/2 cup warm water
2 cups warm milk
1/4 cup Softened butter
2 cups mashed cooked pumpkin
2 teaspoons salt
1/2 cup wheat germ or whole wheat flour
10-12 cups all-purpose flour or bread flour
7 teaspoons dry yeast

This recipe makes about 4 dozen rolls.

OK, here we go.

In a large mixing bowl, combine the water, milk, butter, sugar, pumpkin, and salt. Mix it all well.

Add the yeast, wheat germ and about 7 or 8 cups of flour. Mix. Then, keep adding flour and kneading until the dough is no longer sticky. It should be more elastic.

Put the dough in a greased bowl. Grease the top of the dough, and cover with a towel until it's doubled in size... About 60-90 minutes.

Punch the dough down, and divide it up into thirds.

Divide each third into sixteen pieces, and shape them into balls.

Put the dough balls on a greased baking sheet, and grease the tops again. Cover with the towel again for about 30 minutes.

Bake at 350 degrees for 15 to 20 minutes. You're looking for the tops to become golden.

Serve with warm butter.
