Erin’s Peanut Butter Protein Bar Recipe
I'm still working on ways to eat healthier and one of the keys to my diet plan is to be sure I eat something in the morning. If I don't have my protein shake, I eat a protein bar in the morning to get me going. I've kind of invented my own recipe for a protein bar that I like and people have asked me to share it again.
There are 2 variations and I am sure you can think of others.
NOTE: my measurements are not accurate -- it’s trial and error!!
1 package oats (about 16 ounces)
1 cup brazil nuts
1 cup almonds
1/2 cup of craisins or coconut
4 tablespoons organic peanut butter (add more if you like)
4 tablespoons water (you can use almond milk if you want to)
Put nuts in food processor and chop up good.
Mix oats, peanut butter and water. This will take some time. (you might want to microwave the peanut butter for a moment to soften it).
Add craisins or coconut and nuts
I put these in cupcake sleeves and then put in fridge overnight.
