Holiday Food Recipe: Rum Balls
The holidays are a great time to combine various foods, in this case, chocolate and rum. I have always been a fan of Rum Balls. As a matter of fact, when I go to a party, I specifically look for them and then I selfishly load of my plate (or hand, if plates aren't available), then I nosh away. So rather than seeming greedy and rude, i decided that it was my obligation to start bringing them to the parties. So when I do, this recipe is what I use.
RUM BALLS:
Ingredients:
1 box Nabisco vanilla wafers
1 cup powdered sugar
3 Tbsp cocoa powder
4 Tbsp white karo syrup
1 cup pecans (optional, I am not a fan of nuts in these, but I know plenty of people who are)
1/2 cup spiced rum ( i use captain morgans)
1 box of powdered sugar for rolling them in
Directions:
- Crush vanilla wafers in processor.
- Add crushed nuts. Then add remaining ingredients (except powdered sugar for rolling) and mix well.
- Form into 1 inch balls and roll in powdered sugar to completely coat. (you can also roll them in cocoa or dip them in melted chocolate)
- Store in airtight container.
FYI: the longer they sit the stronger they become
