Today Is National Bacon Day – Try Our Baconator Recipe
We are honoring bacon today!!
Listeners have called and asked me to give them my recipe for the "Baconator" as we celebrate National Bacon Day. So here is my favorite bacon recipe with you. It's called the "baconator" or the bacon weave meatloaf.
Here is the step by step process for making this delicious dish. I start out in my herb garden and grab up the spices I want to use. It's so nice to have fresh herbs growing right there on my patio.
Then I begin the process of weaving the bacon. This takes a little while, but once you get the hang of it, it's pretty easy.
Then you mix ground beef with pork sausage (use whatever combination you like). Then I chop up all of the herbs (I used basil, parsley, chives and thyme) and put this on top of the meat.
For the next step, it's really a matter of your own taste. But I use 1/2 of a large onion and 4 cloves of garlic. Chop these up very tiny and put over the meat.
Then you get down and dirty. Mix the meat up with all of the spices. I would normally put an egg in my meatloaf, but I didn't this time. I put in a tiny bit of salt (the bacon has lots of salt) and some cayenne pepper.
Once the meat mixture is ready, form it into a narrow meatloaf shape and put it on the far end of the bacon weave. Grab the bacon and start rolling it around the meat. Keep rolling and press the bacon down slightly into the meat. Once you have it rolled up neatly, pull the bacon over the ends to make sure the meat is fully wrapped.
Put this in an oven preheated to 350. I didn't cover it. I cooked it for about 30-40 minutes and then turned on the broiler for about 5 minutes to crisp up the bacon. It really is delish!
