If you have ever been to the Jazz and Heritage Festival in New Orleans, you have probably tried Crawfish Monica.  It's a fabulously rich pasta dish loaded with creamy goodness and piles of crawfish. It is very memorable. The recipe is closely guarded, But you can find several varieties out there. I have taken Emeril Lagasse's version and tweaked it to make my own masterpiece.
