As a lover of chocolate candy, this took me completely by surprise.

Apparently we have a new form of chocolate, ruby! We're familiar with milk chocolate, dark chocolate and white chocolate, and now we will soon have ruby chocolate.

According today Today.com, Swiss scientists working for Barry Callebaut debuted the pink confection in 2017. Created from the ruby cocoa bean, found primarily in South America, this chocolate is naturally pink!

"The fourth type [of] chocolate offers a totally new taste experience, which is not bitter, milky or sweet, but a tension between berry fruitiness and luscious smoothness," the company said in a news release at the time of the launch. Adding, "to create Ruby chocolate, no berries or berry flavor, nor color, is added."
