Crawfish season is well underway in the Ark-La-Tex, and this year the farmers say that the mud bugs are larger than normal. Usually at the beginning of the season, they are small with hard shells, but this year brings heartier eating for crawfish lovers.

Crawfish season is not a clearly defined season, such as deer season, however, the mud bugs usually are available for eating somewhere from mid-November through mid-August for those who enjoy the Cajun cuisine. Louisiana accounts for more than 90 percent of U.S. crawfish production, Industry observers estimate.

During the peak of the season, Shreveport hosts its annual Mudbug Madness in the festival plaza, downtown. This year marks the 30th anniversary and the celebration is to take place May 23-26, 2013.

In the meantime, you can get to one of these many restaurants in the area to enjoy this traditional Cajun delicacy.
