Erin’s Protein Bar Recipe

You know I am on this diet and have lost more than 25 pounds. Mornings are the worst part. I do love my egg white protein shake that I get from Vitamin’s Plus (thanks Pam) and now I am adding to that to make sure I start the day with great nutrition.

I developed this recipe over time. It might be good for you, maybe not. But I love it.
You can also add protein powder to the recipe if you want. I often use the egg white protein.

There are 2 variations and I am sure you can think of others.

NOTE: my measurements are not accurate…it’s trial an error!!

1 package oats (about 16 ounces)

1 cup brazil nuts

1 cup almonds

1/2 cup of craisins or coconut

4 tablespoons organic peanut butter

4 tablespoons water (you can use almond milk if you want to)

Put nuts in food processor and chop up good.

Mix oats, peanut butter and water. This will take some time. (you might want to microwave the peanut butter for a moment to soften it).

Add craisins or coconut and nuts

I put these in cupcake sleeves and then put in fridge overnight.

Yummy!
